Caraway Seeds

What is it?
Caraway seeds have been used in Europe longer than any other spice. They have a distinctive flavor and are most often used in breads - rye bread is most popular - biscuits and cookies. There is also a black caraway seed that is unrelated to the true caraway; it is aromatic with a peppery bite and used in Middle Eastern and Indian recipes. Caraway seeds are also used in creamy soups and savory meat dishes.
Substitutes?
Caraway seeds' flavor is often described as dill combined with anise. Try dill as a substitute in savory dishes and anise in sweet dishes.

Cardamom

What is it?
Native to India and Southeast Asia, cardamom is typically sold in a ground form, made from the dried pods and seeds of the cardamom plant. It is used in recipes for many Indian recipes, especially curries, as well as in cakes and cookies, stews and meat and vegetable pies.
Substitutes?
You could try cinnamon, nutmeg, ginger, or ground coriander seeds. Start with half the directed quantity an adjust to your taste. However, keep in mind that cardamom as a very unique flavor that really can't be replicated.
Tastes like?
Sweet and aromatic - anise or licorice-like
